Vegetarian Holiday Meal Ideas

Before we traveled to Sacramento for Thanksgiving, we hosted Friendsgiving. It was literally the day before we left, so we wanted it to be easy to prepare that evening. Additionally the majority of them are vegetarians, so we wanted the meal to cater to them as well. I wanted to share what we made so you could have yummy meal ideas but also it might help you with Christmas meal planning! (Or if you are Type A and want to prep for next turkey day already ;) )
APPETIZERS:
Spinach Dip. I love cooking things myself BUT I didnβt need the extra stress of making this from scratch. I found Stonemill Kitchens spinach dip and it was a HIT. I received so many compliments on it, plus I love that you can serve it hot or cold.
Celery Sticks. I put these out as a healthier option to dip in the spinach dip. They were not the popular option, but I like to put it out there just in case and even organic celery isnβt that expensive.
Tortilla Chips. Always a good idea :)
Fresh Cravings Salsa. This is THE salsa to have. Itβs fresh and Iβm obsessed with it. ps Iβm doing a giveaway with them on this Friday so stay tuned to my instagram to win!!
MEAL:
Potato and Leek Soup. SO yummy and you know soup. The next day it is always better! It fed 6 people well and we had 2 servings left. I will say youβll need to add more spices to it. I added a good amount of salt, pepper, and garlic powder. I froze it and pulled it out to eat tonight and topped it with thick cut bacon. DIVINE. Side note- the recipe calls for chicken broth, but I subbed for vegetable broth. If youβre making this and donβt have any veggie friends, try opting for bone broth instead of regular chicken broth. Iβm currently trying Kettle and Fire Bone Broth and love it!
Kale and Brussels Sprout Caesar Salad. Itβs a yummy bagged salad that even guys like! Kale you canβt even tell is kale and shaved brussels for a yummy blend. I usually get mine from Whole Foods, but I think Trader Joeβs has one. I can usually link it from Amazon Fresh for you, but they are out right now. I went with a bagged salad because itβs just easy! Less stress is best.
Green Bean Casserole. So. I made mine from scratch. It wasnβt worth the time SO Iβm not even going to tell you the recipe. If itβs not broke donβt fix it and just make the original recipe. Itβs way easy and a crowd favorite.
Goat Cheese Biscuits. I made one batch and should have made a double batch. Everyone loves these! I mentioned it to yβall in my pumpkin biscuit recipe post. Itβs a recipe from Bread and Wine.
Homemade Cranberry Sauce. This is super easy and better for you than the canned stuff! Itβs great during the meal but also perfect for your morning toast or pbj sandwich. I made this the weekend prior. It only gets better with age!
Baked Veggies. These are easy peasy. I pre-made these and just heated them up the night of. I baked broccoli, brussels sprouts, carrots, onion, and garlic. Sprinkled them with everything but the bagel seasoning, lemon, cracked pepper and called it a day! Another great veggie side is this autumn dish.
Dessert:
Pumpkin Bread. Festive and a favorite!
Baklava. Nick made his familyβs recipe. We had enough to take to our work friends, in addition to our friendsgiving. Canβt share the family secrets, but this recipe looks good!
BEVERAGES:
Apple Cider. This is a great option because you can drink it as is or spike it if you wish. Nickβs friend actually made this from scratch for him! Hereβs a recipe I found.
Topo Chico. Another great option for the non-drinkers. Just chop up some limes!
Beer. Shiner is so Texas and Deep Ellum IPA is one of Nickβs favorites.
Cider. Hard Apple Cider is perfect for this time of year. A personal favorite.
Wine. You know us! We had rosΓ© to start and a couple bottles of red for the meal.
